- 2 ½ lbs boneless skinless chicken thighs
- 1 cup pineapple juice
- ½ cup low-sodium soy sauce
- ½ cup brown sugar
- ¼ cup ketchup
- 2 tablespoons rice vinegar or apple cider vinegar
- ½ teaspoon ground ginger
- 3 garlic cloves minced
- 1 tablespoon cornstarch optional, for thickening
- 1 tablespoon water optional, for thickening
- Sliced green onions and sesame seeds for garnish (optional)
In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, vinegar, ginger, and garlic.
Place chicken thighs in the crockpot and pour the sauce over the top.
Cover and cook on LOW for 4–6 hours or on HIGH for 3–4 hours, until the chicken is tender and cooked through.
Optional: To thicken the sauce, mix cornstarch and water in a small bowl, then stir into the crockpot during the last 30 minutes of cooking.
Serve the chicken with rice or vegetables, and spoon extra sauce over the top. Garnish with green onions and sesame seeds if desired.
