Ingredients

  • 1 cup low-fat cottage cheese
  • ¼ cup shredded pepper jack cheese or 1 oz cubed
  • 1 tablespoon low-sodium taco seasoning

Optional toppings or mix-ins may include:

  • Green chiles
  • Salsa
  • Diced tomatoes
  • Diced red onion
  • Chopped cilantro
  • Diced jalapenos

Instructions

  • Add cottage cheese, pepper jack cheese, and taco seasoning to a blender or food processor.
  • Blend until completely smooth.
  • Transfer to a microwave-safe bowl and heat in 30-second intervals, stirring after each, until warmed and melty. Serve immediately.
