Ingredients

  • 2 pounds russet or Yukon Gold potatoes peeled and cubed
  • 1 teaspoon salt for boiling water
  • 1 cup cottage cheese
  • 2 tablespoons butter
  • ¼ cup milk adjust for desired consistency
  • ½ teaspoon garlic powder optional
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley optional, for garnish

Instructions

  • Place the cubed potatoes in a large pot and cover with water. Add 1 teaspoon of salt and bring to a boil over medium-high heat.
  • Reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • Drain the potatoes and return them to the pot.
  • Add the cottage cheese, butter, and garlic powder (if using). Use a potato masher or an immersion blender to mash until smooth and creamy.
  • Season with salt and pepper to taste. Adjust the consistency with the milk if needed.
  • Transfer to a serving dish and garnish with parsley, if desired. Serve warm.
