Ingredients

  • 15 ounces chickpeas drained and rinsed
  • 1 large avocado diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • ¼ cup crumbled feta cheese optional
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the chickpeas, avocado, cherry tomatoes, red onion, and cilantro.
  • Drizzle with olive oil and lemon juice.
  • Season with salt and pepper to taste.
  • Gently toss all the ingredients together until well combined.
  • If using, sprinkle the crumbled feta cheese on top before serving.
