- 1 tablespoon vegetable oil
- 4 ounces chorizo
- 1 small yellow onion diced
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cloves garlic minced
- 1 ½ cup orzo pasta
- 2 medium tomatoes chopped
- 2 ½ cups chicken broth
- 2 ounces Parmesan cheese
- ¼ cup chopped parsley optional
In a large pan add the oil and chorizo and cook on medium to high heat, stirring occasionally. l.
Once it starts to brown add in the onions and cook until soft, around 3-4 minutes.
Add the garlic and orzo and cook until the garlic becomes fragrant. Stir in the tomatoes as well.
Add the broth and bring the mixture up to a boil, cover and reduce to a simmer.
Cook for about 10 minutes or until the pasta is cooked and there is no more broth
Stir in the cheese, parsley, salt and pepper and serve, top with more cheese before serving!
- I do like to cook the chorizo on medium to medium-high heat to create a nice sear and fully cook the diced chorizo. It helps to add more flavor.
- Make sure to use a wooden spoon to scrape the bottom of the pan to remove any stuck-on bits. This is going to help infuse more flavor into the dish.
- You can control the heat factor of this recipe. Use a mild chorizo if you want light, or opt for hot or chili flakes for an extra spicy dish.
- Simmering the mixture will help reduce the liquid and it will become a thicker consistency as it cooks on the stovetop. If you find the pasta is still needing to cook longer add a bit more broth to the mixture so it can soak it up.
