Preheat the oven to 400 degrees F.
Pat the chicken breasts dry with paper towels. Season both sides with the salt, black pepper, and smoked paprika.
Heat the olive oil in a large oven safe skillet over medium high heat.
Add the chicken and sear for 2 to 3 minutes per side, until lightly browned.
While the chicken sears, whisk the maple syrup, Dijon mustard, soy sauce, garlic, apple cider vinegar, dried thyme, and red pepper flakes in a small bowl.
Pour the maple mixture over the chicken. Turn each piece with tongs so it is coated evenly.
Transfer the skillet to the oven. Bake for 25 to 30 minutes, until the chicken reaches 165 degrees F on an instant read thermometer.
Remove the skillet from the oven and let the chicken rest for 5 minutes.
Spoon the thickened maple glaze from the pan over the chicken and serve.
