Butter Pecan Maple Bacon Cupcakes

These Butter Pecan Maple Bacon Cupcakes are moist and rich with a creamy frosting topped with salty bacon. They are a heavenly crowd pleaser.

Ingredients

Cupcakes

  • ½ cup unsalted butter room temperature
  • ½ cup pecans chopped
  • 1 ½ cup all purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup brown sugar packed
  • 2 eggs room temperature
  • 2 teaspoon vanilla extract
  • ½ cup buttermilk room temperature

Frosting

  • 6 tablespoon unsalted butter room temperature
  • 1 cup powdered sugar
  • ¼ tsp maple extract
  • 2 tablespoon heavy whipping cream
  • 4 bacon cooked

Instructions

Cupcakes Directions

  • Heat oven to 350F.
  • Line cupcake pan with paper liners.
  • Whisk four, then sift twice into a medium bowl with baking powder and baking soda.
  • In a separate bowl combine the sugar, salt and 1 stick of soft butter.
  • Beat the butter, sugar and salt at medium speed for 5 minutes.
  • Add eggs, one at a time, add vanilla with the last egg and beat well.
  • Now while on low speed of a mixer, add flour mix, alternate with milk, beginning and ending with the flour.
  • Add nuts with the last addition of flour.
  • Stir batter to fully mix all ingredients.
  • Fill cupcake tins  3/4 full.
  • Bake 20-25 minutes or until an inserted toothpick comes out clean.
  • Cool for 15 minutes in cupcake pan.
  • Remove from cupcake pan and continue to cool on wire rack for 1 hour prior to frosting.

Frosting Instructions

  • In a large bowl or stand mixer, beat butter till light and fluffy  slowly adding powder sugar and continue to beat for  4-5 minutes maximum.
  • Scrape the bottom and sides of the bowl gradually adding more powdered sugar.
  • If ingredients do not cream add whipping cream.
  • If the ingredients do cream test to see if the frosting will hold onto a spoon while being held upside down.
  • Add the maple extract and crumbled bacon bits. ( Hold 2 pieces of bacon for topping)
  • Mix well.
  • Scoop frosting into a pastry bag with a frosting tip.
  • Twist the open end of the bag until frosting begins to come out of the tip.
  • Frost the cupcakes.
  • Add a small piece of fried bacon to the top of the frosting on the cupcake.

Notes

I prefer to bake my bacon in the oven, but you can also fry it.
