Slow Cooker Taco Potato Casserole is beefy, cheesy and bursting with flavor.  My family loves the flavor of this casserole and I love how easy it is to dump and go.

When I was a teenager and I would visit a friends house for dinner their family would have a taco flavored hamburger helper for dinner.  I loved the flavors of the meal. 

As my daughter has aged I’ve noticed that she has gathered a love of taco flavored meals also, so I wanted to make something she would like that was different from just plain tacos.  I set about trying to recreate the flavors of the Taco Hamburger Helper but with more homemade ingredients. 

I try my best to balance cost and time to make easy meals that are not only delicious but also budget friendly for your family.  And, this slow cooker casserole helps me accomplish that. I hope that you will enjoy it as well.

Frequently Asked Questions About Slow Cooker Taco Potato Casserole

Can I use a different type of potato?

Yes!  You could use any type of frozen potato.  I’ve used tater tots, crispy crowns, diced southern style hash browns.  Want to up the flavor some try using the diced hash brown potatoes with peppers. It will add a little flavor in your potatoes. 

I do not recommend using fresh potatoes because you will need to get the water out as much as you can.  You would also need to adjust your cooking time as fresh potatoes cook faster than the frozen potatoes will.  That being said you could totally use fresh potatoes if you don’t mind the hassle of squeezing as much water out as possible and reducing your cooking time. 

Can I use nacho cheese soup instead of cheddar cheese soup? 

Certainly you can use nacho cheese soup instead of the cheddar cheese soup.  The nacho cheese soup has a small amount of spice in the soup and will make for a great addition to your slow cooker taco potato casserole. 

If you don’t have cheese soup on hand, I have made a homemade cheddar cheese soup using this recipe.  It’s simple to make and still tastes great. 

Can I use a different type of ground meat? 

Absolutely!  I’ve used ground sausage, and ground turkey to make this casserole.  My family prefers it with ground beef but I really like it with ground turkey.  You can pretty much use any type of ground meat that you have on hand. 

Can I freeze this casserole? 

Yes! One of my favorite things about this casserole is that you can make it a dump and go meal.  If you want to turn this casserole into a freezer meal all you need to do is precook your ground beef and then add all your ingredients to a freezer safe bag.  Seal your freezer bag and store in your freezer for up to 6 months.  When you are ready to cook your meal simply dump into your Crock Pot and allow it to cook until it is done. 

How should I reheat Slow Cooker Taco Potato Casserole? 

Reheat your taco hash brown casserole in the microwave on a microwave safe plate until it is bubbly and hot.  If you are reheating a large portion of your Crock Pot hash brown casserole you can reheat in a preheated oven at 350 degrees for about 10 to 15 minutes.  Make sure to put your leftovers that you are reheating in an oven safe pan such as a cake pan or baking dish.

How To Make 

Step 1. In a skillet, brown the Ground Sirloin, until completely done, and no pink is left. Drain any excess fat.  

Step 2. Add Onion, and cook until golden brown.  

Step 3. Add Garlic and cook for 2 minutes. 

Step 4.  In your slow cooker liner, mix the Shredded Hash-browns, Taco Seasoning, Cheddar Cheese Soup,  and Shredded cheese.  

Step 6. Add the Ground Sirloin, and stir together.  Cover, and cook on high for 3 hours, stirring occasionally.  

Step 7. When Casserole is done, serve topped with Shredded Cheese place the lid back on and allow cheese on top to melt for about 5 minutes, and then chopped green onions. Enjoy!

Using a different type of potato will change your cooking time. 

Slow Cookers all cook differently, the time on this recipe is based on the cooking temperature of my slow cooker.  Keep an eye towards the end of the cook time for your slow cooker.

Ingredients

  • 1 pound ground sirloin
  • 1 sweet onion chopped
  • 1 teaspoon Minced Garlic
  • 1 ounce Taco Seasoning
  • 10.5 ounces Cheddar Cheese Soup
  • 30 ounces Frozen Shredded Hash-browns
  • 2 cups Monterey Jack Cheese shredded
  • 1 bunch of Green Onions washed and chopped – to top

Instructions

  • In your slow cooker, mix the Shredded Hash-browns, Taco Seasoning, Cheddar Cheese Soup, and Shredded cheese.

  • When Casserole is done, serve topped with Shredded Cheese replace lid and allow cheese to melt for 5 minutes, and garnish with chopped green onions. Enjoy!
