Old Fashioned Cajun Cake is a moist and flavorful cake recipe that comes from the south, and it’s one of my favorite dessert recipes. Also known as a crushed pineapple cake, this cake is packed full of amazing flavors and textures. Filled with juicy pineapple, nutty pecans, and rich coconut, this cake is truly one of a kind.

This homemade cake is so easy and straightforward to make, so even beginner bakers can tackle this delicious masterpiece. This unique cake recipe works for any time of year, but my favorite time to make it is during the summer.

 


What Is Old Fashioned Cajun Cake?

Old Fashioned Cajun cake is a delicacy from the south. This dessert is well known there and is served as a dessert in most restaurants or even at the grocery store. This cake is full of pineapple, coconut, and pecans and topped with icing that is rich and moist.

IS OLD FASHIONED CAJUN CAKE SPICY?

Cajun spice is typically associated with spicy or hot foods from the south. However, despite the name, this cake is not spicy. In fact, the name comes from the fact that it originates in the south, where cajun cuisine was made. While the name cajun may make you think it packs a punch, there are very little spices in this cake, to begin with. There isn’t any nutmeg or cinnamon in it either!

How Do You Store Old Fashioned Cajun Cake?

There are two options for storing your cake once it’s been prepared. It has a short shelf life of about 3-5 days on either the counter or the fridge. The main thing is to make sure that it is kept away from air and heat. This recipe tastes great cold or room temperature, but how you store it is up to you.

 

This Old Fashioned Cajun Cake will be a hit at your next family gathering or party.  This cake will wow your guests and keep them asking you to make it time and time again.   This cake as become a stand by in my house.

Ingredients

  • 2 cups all purpose flour
  • 1 ½ cup granulated sugar
  • 2 teaspoon baking soda
  • 1 15 oz can crushed pineapple undrained
  • 2 large eggs

Icing Ingredients

  • 1 stick unsalted butter
  • ¾ cup granulated sugar
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, stir flour, sugar and baking soda.
  • Mix in pineapple and eggs until combined.
  • Bake for 30-35 minutes.
  • Begin icing while the cake is baking, heat butter, sugar and milk to a boil stirring often.
  • Add in vanilla, coconut and pecans then boil for about 2-3 minutes while still stirring often.
  • Once cake is out of the oven and cooled to warm temp pour icing over the cake until completely covered.
  • Allow cake to set for about 30 minutes to maybe an hour.
  • Cut and enjoy!

Notes

If you want to turn this into a layer cake you can use two 9 inch cake pans.
