This French onion soup gnocchi is a baked French onion soup with a savory twist with the gnocchi in each spoonful. This is a great fall and winter season when the weather is cold and you need a warm bowl of soup.

In a Dutch oven melt your butter and oil in the pot over medium heat. Then add in the onions and allow the onions to caramelize.

Stir in the garlic, salt, sugar and pepper. Cook for 2-3 minutes or until the garlic is fragrant. 

Pour in the broth, water, wine, Worcestershire sauce, thyme, and your bay leaves. Bring the soup to a simmer and cook until all the flavors blend. 

Cook the gnocchi separately as directed on the package. Then drain and add the gnocchi to the soup pot.

Preheat the broiler. Place small bowls on a baking sheet, and fill them with the soup mixture.

Sprinkle with cheese and then broil until the cheese is golden brown and bubbly. Serve and enjoy.

Hint: Feel free to elevate the flavor even more by making homemade gnocchi. 

Variations

Here are a few ways to change up this 5 star rating soup. This is a classic dish that is great any time of year.  

Equipment

I prefer to use a Dutch oven but you could also use a large skillet for cooking up the sliced onion and broth mixture. But you will also want to reach for oven-safe ramekins or oven-safe bowls for cooking your individual soups in the oven. The perfect soup for chilly nights or when you are craving comfort. 

Storage

Store the soup in an airtight container in the fridge for 2-3 days. Then when you are ready just reheat your soup in the microwave for a quick heat, or in the oven.

The other option is you can freeze the soup as well. Place the soup in the freezer-friendly containers, and freeze for 3-4 months. Then defrost in the fridge the night before or defrost in the microwave.

  • Make sure to take the time to caramelize the onions as this is going to create that sweet and savory flavor that elevates the flavor of this soup tremendously. 
  • This soup is best served hot, so once you are done broiling the soup, serve it up for the best texture and flavor. 
  • Do not overcook the gnocchi or it will become mushy and too soft and kind of fall apart. 
  • Feel free to taste the soup and add in a pinch of salt or other seasonings to flavor your soup before you go to broil the soup. 

FAQs

Can I make this soup vegetarian?

You can for sure reach for vegetarian ingredients to make this a vegetarian version. Use vegetable broth, skip the Worcestershire, and replace it with a little liquid smoke or a vegetarian alternative.

Can I make this soup in advance?

​You are welcome to make the soup a day before you plan to serve it. Caramelize the onions and just keep the soup mixture stored in the fridge. Then cook your gnocchi right before you assemble your soup. Then top with cheese and broil right before serving.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups beef broth or vegetable broth
  • 1 cup water
  • ½ cup dry white wine optional
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 16 ounces potato gnocchi
  • 1 cup shredded Gruyere or Swiss cheese
  • Fresh parsley chopped (for garnish)

Instructions

  • In a large pot or Dutch oven, melt the butter with the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
  • Stir in the minced garlic, sugar, salt, and black pepper. Cook for an additional 2-3 minutes until the garlic is fragrant.
  • Pour in the broth, water, white wine (if using), Worcestershire sauce, thyme, and bay leaf. Bring the soup to a simmer and let it cook for 15-20 minutes to allow the flavors to meld together.
  • While the soup is simmering, cook the gnocchi separately according to the package instructions. Drain and set aside.
  • Preheat the oven’s broiler.
  • Once the soup has simmered, remove the bay leaf. Ladle the soup into oven-safe bowls or ramekins. Place a handful of cooked gnocchi on top of each bowl of soup.
  • Sprinkle a generous amount of shredded Gruyere or Swiss cheese over the gnocchi and soup in each bowl.
  • Place the bowls on a baking sheet and broil for 2-3 minutes, or until the cheese is bubbly and golden brown.
  • Carefully remove from the oven (the bowls will be hot!) and garnish with chopped fresh parsley.
  • Allow the soup to cool slightly before serving to avoid burning your mouth. Enjoy this comforting French Onion Gnocchi Soup!

Notes

If you plan to have leftovers of this soup, add the gnocchi to your individual bowls instead of the entire pot, so that they don’t become soggy and mushy.
