I have enjoyed a lot of different muffin recipes over the years. However, my favorite has always been Chocolate Chip Muffins. There is something to be said about making your own muffins at home. Soft to eat and the chocolate melts right in your mouth. If you’re looking for a muffin that will get your family excited, this is the one!

Chocolate Chip Muffins Recipe 

With a buttery flavor on the inside, these muffins are sure to be a hit at home. These taste like the kind of muffins you’d get at the bakery. This is also the type of muffin that you can sit down in your kitchen and enjoy with a nice warm cup of coffee. The sweetness from the baked good, plus the coffee hits your tastes buds just right. 

The right muffin recipe takes a while to perfect. Since I did all the hard work for you, all you really need to do is enjoy the chocolate chip muffins. Make them on the weekend and enjoy it as a quick breakfast option. When your kids need you to bake them something for a function, these muffins come out just right every single time. 

I can’t tell you how many times I’ve made muffins for the sole purpose of having them for a quick breakfast. We prefer chocolate chip type muffins around here, so they are my most made muffin recipe. You can also get creative with this recipe and add different ingredients as you see fit. 

What Kind of Chocolate Chips Should I Use?

When it comes to these Chocolate Chip Muffins, you can literally use any kind of chocolate chips you want. You can use dark chocolate chips, semi-sweet, milk chocolate, or even Lily’s Chocolate Chips (which are a low sugar and carb type). If you are dairy-free, there also options for chocolate chips that you can use. So, you get to decide which type of chocolate you want to use and make it just how you want. 

How to Keep Chocolate Chips From Melting in Muffins

Do the chocolate chips keep melting in your muffins? If this is frustrating for you, then there is one way around it. Take the chocolate chips, and toss them in some flour. This trick works by keeping those chocolate chips on top and from sinking into the muffin and melting. If you prefer your chocolate chips not to melt, then this could be a good option for you.

How to Make Your Chocolate Chip Muffins Fluffy

Who doesn’t love a good and fluffy muffin? I know I do! One trick I’ve learned about muffins and making them fluffy is the art of room temperature. When you keep the eggs, milk, and butter are room temperature, they work differently in your batter. It’s also because when they are room temp, it helps make a nice and smooth batter. That mixture traps the air in the batter and then in the oven, everything can expand and make itself nice and fluffy.

Ingredients

  • 2 ½ cup all purpose flour
  • ½ cup quick oats
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • ¾ cup brown sugar
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 375 degrees. Line a muffin pan with liners or spray with nonstick cooking spray.
  • In a medium bowl, whisk together flour, oats, baking powder, and salt until combined. Set aside.
  • In a separate bowl, add the milk, vegetable oil, brown sugar, eggs, and vanilla. Whisk until well combined.
  • Add the dry ingredients to the wet ingredients one cup at a time, stirring between each addition.
  • Fold in the chocolate chips.
  • Spoon the batter into the muffin pan, fill each cup ¾ of the way full.
  • Bake in the preheated oven for 22 to 25 minutes. The muffins are done when a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes, then remove to a wire cooling rack to cool completely.

Notes

Want to change this recipe up?  Add in a half cup chopped nuts if you don't have a nut allergy in your household.
