BBQ Smashed Potatoes

BBQ Smashed Potatoes are seasoned potatoes, baked until crispy and topped with melted cheese and crunchy bacon.  They are a perfect side dish that the entire family will love.

BBQ Smashed Potatoes

WHAT YOU’LL NEED

Potatoes – Small red potatoes, or other small potatoes like Fingerling. 

Butter – I used salted, unsalted would work also. 

Seasonings and Spices – Salt, Paprika, Garlic Powder, Onion Powder, Chili Powder,  Ground Cumin, ground black pepper and dried parsley flakes, 

Cheese – Cheddar Cheese or Mexican Four Cheese blend. 

Bacon – Any kind already cooked.  I used a precooked bacon for ease. 

STEP BY STEP DIRECTIONS

Step 1.       Bring a large pot of water to a boil. Add the potato halves and cook until tender, around 10 minutes.

Step 2.       Preheat the oven to 400 degrees. Grease a baking sheet with nonstick cooking sprays.

Step 3.       Place the potatoes skin side down on the baking sheet. Use a fork to smash the potatoes.

Step 4.       Combine the salt, paprika, garlic powder, onion powder, mustard powder, chili powder, cumin, and black pepper in a small bowl.

Step 5.       Spread the melted butter over the top smashed potatoes. Season with the BBQ seasoning mix.

Step 6.       Place the potatoes in the preheated oven and bake for 30 minutes.

Step 7.       When the potatoes are beginning to brown, remove them from the oven and top with shredded cheese and bacon bits. Cook another 5 minutes, until the cheese is melted.

Step 8.       Garnish with dried parsley flakes before serving.

TIPS AND FAQ

If you find it hard to use a fork to smash the potatoes.   You could also use the bottom of a glass or a potato masher.  

I boil my potatoes ahead and store them in the fridge until I am ready to make them when I have a busy day and need a little quicker dinner. 

Reheat leftover BBQ Smashed Potatoes in the oven at 325 degrees for 10 mins to maintain the crispy and crunchy texture.   You could microwave the leftovers if you are in a hurry, but they will lose some of their crispy texture.   You could also reheat in your air fryer at 350 for about 5 minutes.  

I serve these potatoes with our favorite Ranch Chicken Tenders, or as a side dish to meatloaf.   

You can top your potatoes with anything that your family likes.   Some of us in our household like sour cream on them, others like them just as they are.

Ingredients

  • 2 pounds red potatoes halved
  • 2 tablespoons butter melted
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon mustard powder

  • 4 strips bacon cooked and chopped
