Air Fryer Cornbread Muffins

Air Fryer Cornbread Muffins are delicious and easy to make. You'll love how crispy they are on the outside and fluffy on the inside.

Ingredients

  • 1 ½ cup milk
  • 1 cup cornmeal
  • 1 cup flour all-purpose
  • 8 tablespoon salted butter melted
  • 3 tablespoon granulated sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs

Instructions

  • In a large bowl, mix together all of your ingredients.
  • Scoop your cornbread mixture into a silicone mold 3/4 of the way.
  • Place your muffins in the Air Fryer and cook at 330° for 10 minutes or until golden brown on top.
  • Continue steps 2 and 3 until all of your batter is used.
  • Serve and enjoy!

Notes

 
  • If you do not have an Air Fryer, no problem! You can also cook your cornbread muffins at 375° for 20-25 minutes.
  • You can use 1/2 cup of vegetable oil in place of the melted salted butter. Butter is better but vegetable oil works just as well!
  • Instead of regular salt, try using garlic salt or Mrs. Dash seasoning for a little added flavor to your cornbread muffins.
Depending on the size of your air fryer you may need to make these muffins in batches. 
Leftover cornbread can be stored in an airtight container for up to three days. You can also freeze it in a freezer-safe container for up to two months.
