Instant Pot Spicy Black Eyed Peas with Sausage

I was born and raised here in the south, and down here we love our black eyed peas.  Well, let’s be honest we love all peas equally.   However, black eyed peas seem to have a special place in our hearts.  I wanted to get a little creative with black eyed peas this year and see if I could jazz them up.  I added in some diced tomatoes with green chillies, and some cajun andouille sausage.  It makes these black eyed peas taste out of this world.  One bite will wow your taste buds and have you coming back for more. 

WHAT YOU’LL NEED

Black Eyed Peas – dried, and unseasoned. 

Oil – I used olive oil for the best flavor but canola or vegetable would work also. 

Onion – I used a sweet onion.  Yellow or white would also work fine in this recipe. 

Sausage – Andouille Smoked  Sausage 

Garlic – Minced 

Ham – I used a hickory smoked ham.  You could also use a country ham,  I don’t recommend using a honey ham. 

Broth – Chicken broth or bouillon cubes and water 

Tomatoes – Canned diced tomatoes with green chillies 

Seasonings – Bay leaves, dried thyme leaves, salt and ground black pepper

STEP BY STEP INSTRUCTIONS

  1. Using the saute mode, heat the electric pressure cooker until “hot.” Add the olive oil, sausage, and onion. Cook until the onion is softened and the sausage is browned, about 5 to 6  minutes. Stir in garlic.
  1. To the electric pressure cooker, add the chicken broth and scrape the bottom with a wooden spoon to remove any cooked on bits. Cancel the saute mode. Stir in the salt, peas, bay leaves, thyme, and ham. Pour the tomatoes with chiles on top and do not stir.
  1. Place the lid on the electric pressure cooker and set the valve to sealing. Set the pressure cooker to “manual” or “pressure cook” for 20 minutes. Naturally release for 15 minutes when the cook cycle is complete and then quick release the remaining pressure.
  1. Remove the bay leaves and stir the peas before serving.

HOW TO MAKE INSTANT POT SPICY BLACK EYED PEAS WITH SAUSAGE LESS SPICY? 

These Instant Pot Spicy Black Eyed Peas with Sausage do have a little kick to them.  I enjoy having that pop of bold flavor. It makes this dish perfect for a cold rainy day to warn you up for the inside out.   

However, if you want to tone down the spice level and make it a more milk dish.   I would recommend that you use a mild can of diced tomatoes with green chilies.  I know that Rotel makes a can that is mild.   You can also use a regular smoked sausage rope instead of using the cajun andouille sausage.  By making those two substitutes you will still have the flavor of the dish without the heat. 

HOW TO STORE AND REHEAT INSTANT POT SPICY BLACK EYED PEAS WITH SAUSAGE?

Store any leftover Instant Pot Spicy Black Eyed Peas with Sausage in your fridge for up to five days   You could also store leftovers in the freezer.  But, keep in mind that freezing the cooked peas can soften them some when you reheat them,  

Reheat your leftover black eyed peas and sausage in a saucepan on the stove for about 5 to 7 minutes on a medium heat.  You don’t want to cook them again, just get them warm.   You can also reheat them in the microwave.   I prefer reheating on the stove for the freshest taste. 

WHAT SHOULD I SERVE WITH INSTANT POT SPICY BLACK EYED PEAS WITH SAUSAGE? 

I love to serve my Instant Pot Spicy Black Eyed Peas with turnip or collard greens.  I did mention that I’m from the south right?  You could serve with any type of green vegetable like a salad, or even as a side dish to go along with a pork tenderloin or roast.  I also make a nice pot of cornbread and then you have a filling and delicious meal that you are bound to enjoy.
