These honey cinnamon bars are sweet and perfect for breakfast for snacks if you want to give your family a fresh homemade treat.  My family has fallen in love with this bars and ask me to make them on a regular basis. 

Do I have to put the nuts in this recipe?

If you don’t not like nuts, like my husband, then you are welcome to leave them out.  Or if you have a nut allergy feel free to skip them. If you are leaving them out then there is no need to replace them with anything else.  They don’t change the makeup of the recipe that much. You should replace them with chocolate chips if you want to get extra fancy. 

Do I really need to toast the Walnuts?

You do not have to toast the walnuts if you really want to skip that step.  But, trust me using toasted walnuts is worth the added flavor. When you toast a nut it brings a deeper and rich hint to the nuts flavor.  And, if you add just a little salt to them it takes them to the next level. Feel free to use raw walnuts though if you only have those on hand. 

When should I serve these bars?

I usually serve these bars for snacks.  My family are big snack eaters and they ove fresh baked goods for a snack.  However, I’ve also been known to serve these bars for breakfast. My girl is a cinnamon lover.  She will eat anything with cinnamon on top for breakfast so I take full advantage and give her these fresh baked bars when I don’t have some muffins on hand. 

How should I store these bars?

You should store these bars at room temperature on the counter in a covered container.  I keep a thick plastic container with a lid on hand that I use for these bars. I don’t recommend storing these in the fridge. However, these do freezer perfectly if you want to save some for later.  To thaw them just place them on the counter for about 30 minutes before serving. Make sure to keep these away from heat sources. 

How long can I store these bars? 

You can store these bars for up to five days on the counter.  If you are freezing them I would recommend storing them in the freezer for up to three months.  Once they are thawed from the freezer I would recommend only keeping them on the counter for three days.

Ingredients

  • 1 C sugar
  • ¾ C canola oil
  • ¼ C honey
  • 1 large egg
  • 2 C all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 C chopped walnuts toasted

Glaze Ingredients

  • 1 C powdered sugar
  • 2 tablespoon mayonnaise
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoon water
  • Cinnamon for topping

Instructions

  • Preheat the oven to 350 degrees.
  • Line a baking pan with parchment paper. Set aside.
  • In a large bowl, beat sugar, oil, honey and egg until combined.
  • In another bowl, whisk flour, baking soda, cinnamon and salt.
  • Gradually beat dry mixture into wet mixture.
  • Stir in 1 cup walnuts.
  • Spread into the lined baking pan.
  • Bake until golden brown, 10-12 minutes; the edges may puff up.
  • Set aside to cool completely on a wire rack.
  • For glaze, in a small bowl, mix powdered sugar, mayo, vanilla and
  • enough water until the texture is thick but spreadable.
  • Spread glaze over top the bars.
  • Sprinkle cinnamon over the glaze.
  • Set aside till the glaze hardens.
  • Cut into bars and enjoy!

Notes

You can take out the nuts in this recipe if you have a nut allergy or do not like them.  Nutritional information is calculated using nuts as an ingredient.
