What is Chinese Curry Chicken? 

Chinese  Curry Chicken is tender, juicy chicken in curry sauce with bell peppers, carrots and onions. Chinese curry is similar to a stew and is typically a mild curry flavor instead of the strong and pungent curry flavor from Indian food. 

It’s important when making Chinese dishes at home that you buy true sesame oil.  Sometimes when you are purchasing sesame oil from a grocery store they tend to sell imitation sesame oil.  You will want to make sure the ingredients on your oil are actually sesame. The sesame flavor is important to make the dish authentic. 

Where do I buy coconut milk? 

You can buy coconut milk at your local grocery store.   In my store it is found on the same aisle that you can find condensed milk.  It’s the baking aisle near the flour, sugar and cake mixes. 

Coconut milk is a milky-white liquid extracted from the grated pulp of  coconuts. The rich taste of coconut milk is due to its high oil content.  It has a slight creaminess to it’s texture. 

Where do I buy Red Curry paste?

Red Curry paste is available at your local store in the ethnic aisle.  In my store I can find it in a small jar near the soy sauce and other Asian foods.  

Red curry paste is made from red chili peppers, garlic, lemongrass, ginger, salt, shallots, coriander and a mix of other spices.  Red curry paste is flavorful but not overly spicy with the addition of garlic and lemony flavors.

What is fish sauce?

Fish sauce is made from fish or krill that has been coated in salt and fermented for up to two years. Fish sauce is a liquid that has a salty and fish flavor. 

Just like red curry paste you can find fish sauce in your local store in the ethnic food aisle.   If your store does not have an ethnic food section check for a local Asian store or a larger supermarket instead of a smaller chain. 

Can I use brown rice instead? 

Yes you can use brown rice instead of basmati rice.  You will just want to prepare your rice as your package states no matter what variety of rice you use.  I used basmati in this recipe because that is what my local Chinese restaurant uses.

Equipment

  • Instant Pot or Pressure Cooker

Ingredients

  • 1 tablespoon olive
  • 1 yellow onion diced
  • 2 Tbsp. minced garlic
  • 2 tablespoon red curry paste
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon salt
  • 1 can full-fat coconut milk
  • 3 chicken thighs thinly sliced
  • 1 each red green and yellow bell pepper, sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • ¼ cup chopped cilantro
  • 1 Package of prepared basmati rice

Instructions

  • Add olive oil, onion, garlic, red curry paste, brown sugar, lime
  • juice, fish sauce, salt, coconut milk to the Instant Pot.
  • Stir to combine
  • Add the chicken thighs to Instant Pot toss to coat in the sauce.
  • Place the lid on the Instant Pot and set the valve to seal.
  • Press the manual button, cook for 3 minutes.
  • Prepare the rice as directed.
  • Set to the side.
  • Add the cornstarch and water in a small bowl.
  • Mix to combine.
  • Do a quick release of the pressure on the Instant Pot.
  • Add in bell peppers and stir.
  • Place the lid on the Instant Pot and set the valve to seal.
  • Press the manual button, cook for 1 minute.
  • Open lid and add in the cornstarch slurry.
  • Mix to combine.
  • Serve and Enjoy!

Notes

You can substitute the chicken thighs with chicken breasts if you want to lower the fat content of the recipe.  But, the chicken thighs really keep the chicken tender in this recipe.
