- 1 cup frozen strawberries chopped
- 2 tablespoons all purpose flour
- 2 cups all purpose flour divided
- 1 cup white sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ⅔ cup buttermilk
- ½ cup vegetable oil
- 1 large egg
- 2 ½ tablespoons plain yogurt
- 1 teaspoon vanilla extract
- ¾ cup chocolate chips plus additional for garnish
Preheat the oven to 400°F. Prepare a muffin tin using paper liners, spritzed with nonstick cooking spray
Mix together the strawberries in 2 tablespoons of flour until well blended.
In a large mixing bowl, whisk together The remaining flour, sugar, baking powder, cinnamon, and salt.
In a medium bowl or large mixing cup, whisk together the buttermilk, oil, egg, yogurt, and vanilla extract.
Add the wet ingredients into the dry ingredients, stirring just until combined. Add the strawberries and chocolate chips.
Divide the dough between the muffin cups. Sprinkle with additional chocolate chips if desired. Bake for 20 minutes or until a toothpick inserted in the middle of a muffin returns clean.
Place on a wire rack to cool before serving.
Be careful to not overmix the batter of these muffins once the flour has been added. Overmix mixing can cause dry muffins.
Store these muffins in an airtight container for up to four days.
