Equipment

  • Instant Pot or Pressure Cooker

Ingredients

  • 1 lb mild ground Italian sausage or links with casings removed
  • 4 tablespoons minced garlic
  • 1/2 teaspoon crushed red pepper optional
  • 28 ounces crushed tomatoes
  • 1 teaspoon onion powder
  • 3 cups chicken broth
  • ½ cup vodka
  • 16 ounces mini penne pasta
  • ½ cup heavy cream
  • 1 teaspoon pepper
  • 1 teaspoon salt

Instructions

  • Set instant pot to sauté and toss in the sausage. Chop sausage into bite size pieces while browning.
  • Once sausage is browned, toss in the garlic and cook for 3 minutes.
  • Add the spices, tomatoes, broth, vodka and pasta. Close the lid and pressure valve and pressure cook on high for 5 minutes.
  • Manually release the pressure valve, remove the lid and stir in the heavy cream.
  • Serve once cooled

Notes

If you do not like a spicy pasta sauce, leave out the optional crushed red pepper flakes.
