BBQ Smashed Potatoes

BBQ Smashed Potatoes are seasoned potatoes, baked until crispy and topped with melted cheese and crunchy bacon.  They are a perfect side dish that the entire family will love.

Equipment

  • Fork, Glass or Potato Masher

Ingredients

  • 2 pounds red potatoes halved
  • 2 tablespoons butter melted
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon mustard powder
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 strips bacon cooked and chopped
  • ¼ teaspoon Dried parsley flakes for garnish

Instructions

  • Bring a large pot of water to a boil. Add the potato halves and cook until tender, around 10 minutes.
  • Preheat oven to 400 degrees. Grease a baking sheet with nonstick cooking sprays.
  • Place the potatoes skin side down on the baking sheet. Use a fork to smash the potatoes.
  • Combine the salt, paprika, garlic powder, onion powder, mustard powder, chili powder, cumin, and black pepper in a small bowl.
  • Spread the melted butter over the top smashed potatoes. Season with the BBQ seasoning mix.
  • Place the potatoes in the preheated oven and bake for 30 minutes.
  • When the potatoes are beginning to brown, remove them from the oven and top with shredded cheese and bacon bits. Cook another 5 minutes, until the cheese is melted.
  • Garnish with dried parsley flakes before serving.

Notes

You can top these potatoes with sour cream or anything that your family prefers.
