BBQ Smashed Potatoes are seasoned potatoes, baked until crispy and topped with melted cheese and crunchy bacon. They are a perfect side dish that the entire family will love.
Bring a large pot of water to a boil. Add the potato halves and cook until tender, around 10 minutes.
Preheat oven to 400 degrees. Grease a baking sheet with nonstick cooking sprays.
Place the potatoes skin side down on the baking sheet. Use a fork to smash the potatoes.
Combine the salt, paprika, garlic powder, onion powder, mustard powder, chili powder, cumin, and black pepper in a small bowl.
Spread the melted butter over the top smashed potatoes. Season with the BBQ seasoning mix.
Place the potatoes in the preheated oven and bake for 30 minutes.
When the potatoes are beginning to brown, remove them from the oven and top with shredded cheese and bacon bits. Cook another 5 minutes, until the cheese is melted.
Garnish with dried parsley flakes before serving.
