Line a baking pan with parchment paper. Set aside.
In a large bowl, beat sugar, oil, honey and egg until combined.
In another bowl, whisk flour, baking soda, cinnamon and salt.
Gradually beat dry mixture into wet mixture.
Stir in 1 cup walnuts.
Spread into the lined baking pan.
Bake until golden brown, 10-12 minutes; the edges may puff up.
Set aside to cool completely on a wire rack.
For glaze, in a small bowl, mix powdered sugar, mayo, vanilla and
enough water until the texture is thick but spreadable.
Spread glaze over top the bars.
Sprinkle cinnamon over the glaze.
Set aside till the glaze hardens.
Cut into bars and enjoy!
