Slow Cooker Chicken wild rice soup

Ingredients

  • 1 large onion diced
  • 1 tablespoon garlic minced
  • 1 cup carrots diced
  • 2 cups celery diced
  • 1 Rotisserie Chicken removed from the bone and shredded
  • 4 cups chicken stock
  • 2 cups water
  • 1 box of long grain wild rice
  • 2 teaspoon Italian Seasoning
  • 2 bay leaves
  • 2 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 28 oz   artichoke hearts 2- 14 oz cans drained

Instructions

  • In a slow cooker add all of your ingredients except the rice to the slow cooker
  • Turn your slow cooker on high.
  • Cook on high for 3 hours.
  • Add the long grain rice  and seasoning packet.
  • Cook for 1 more hour. Or until the rice is tender.

Notes

Be sure to not allow the rice to cook too long, as it will soak up all your liquid.  Cook rice until it is just tender.   If you are reheating and the liquid has been soaked up just add more water when reheating.
