Thin Mint Truffles

Thin Mint Truffles are a delicious combination of sweet mint, and rich chocolate. You can't go wrong with this sweet treat.

Equipment

  • baking sheet lined with wax paper
  • food processor
  • cookie scoop or ice cream scoop
  • microwave-safe bowl

Ingredients

  • 4.5 ounces Thin Mint cookies
  • 2 ounces cream cheese room temperature
  • ½ cup semi sweet chocolate chips
  • 1 teaspoon vegetable shortening or coconut oil

Instructions

  • Prepare a baking sheet with waxed paper.
  • Place the cookies into a food processor and pulse until the cookies become fine crumbs.
  • Cut the cream cheese into chunks and add the cream cheese to the food processor. Pulse until the mixture is well blended and forms a large ball.
  • Using a small cookie scoop, portion the cookie dough into 1-inch balls and roll into a smooth ball.
  • Optional: For best results, freeze the cookie balls prior to decorating.
  • Dip each ball into the melted chocolate and tap to remove the excess chocolate. Place the cookie ball on the prepared cookie sheet and immediately decorate with sprinkles or crushed cookies.
  • Place the cookie sheet in the refrigerator for about 1 hour or until firm.
  • To freeze:
  • Prepare the cookie balls as directed and place on the baking sheet.
  • Put the baking sheet into the freezer until the cookie balls are frozen.
  • Transfer the cookie balls to an airtight container. Seal and freeze up to 6 months.

Notes

    • Make sure to finely grind the mint chocolate into a powder so it mixes well with the other ingredients.
    • For best results, chill the truffle mixture before rolling them into balls.
    • If you have trouble shaping them, lightly wet your hands with cold water to the process easier.
    • To keep them fresh and delicious, store them in an airtight container in the refrigerator.
    • If you chocolate starts to harden you can pop it into the microwave to remelt it.
    • You could use a double boiler to prevent the chocolate from hardening while you dip.
