- 8 ounces cream cheese room temperature
- 1 cup sour cream
- 1 ½ tablespoons fajita seasoning mix
- 4 cups cooked and diced chicken breast
- 1 cup uncooked instant rice
- 1 green bell pepper seeded and diced
- 1 red bell pepper seeded and diced
- 1 onion diced
- 2 cups shredded fiesta blend cheese divided
- Your favorite toppings diced tomatoes, diced avocado, freshly chopped cilantro as garnish
Preheat the oven to 350°. Prepare a 9 x 13 baking dish with nonstick cooking spray
In a large bowl, mix the cream cheese, sour cream, and fajita seasoning until well blended. Add the chicken, rice, bell peppers, onions, and 1 cup of cheese to the cream cheese mixture, stirring to combine.
