Air Fryer Corn Ribs

These "corn ribs" are a cross between sweet and savory, and they're perfect for an easy summer side dish. Plus, the air fryer makes them healthy and crispy without any added fat!

Equipment

  • knife and cutting board

Ingredients

  • 2 ears of corn
  • 2 tablespoons mayonnaise
  • ½ cup grated parmesan
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper

Instructions

  • Shuck the corn easily by microwaving the ears for 3 minutes. Remove the stem at the base of the corn and squeeze the corn from the husk. This is a super simple way to clean the corn.
  • Cut the corn in half long ways and then cut the half into another half. Each ear of corn should yield 4 long quarter pieces.
  • Place corn ribs in air fryer basket and spray with oil. Cook at 350 for 10 minutes until corn is cooked.
  • While cooking, pour grated parmesan in a flat dish.
  • When corn is finished cooking, brisket each corn rib with mayonnaise and then coat the kernels in the parmesan.
  • Season ribs with red chili powder
  • For a spicier taste add a few dashes of cayenne

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. 
I recommend reheating these corn ribs in the air fryer or oven for a freshly made taste.
