Strawberry Blondie Recipe

Equipment

  • 8x8 baking dish
  • Whisk or wooden spoon
  • Parchment paper, optional
  • Nonstick spray
  • Large bowl
  • small bowl

Ingredients

  • 15 ounces strawberry cake mix
  • 2 large eggs
  • cup vegetable oil
  • ½ cup white chocolate chips

Vanilla Glaze

  • 1.5 cup powdered sugar
  • 2-3 tablespoons heavy cream
  • 1 teaspoon clear vanilla extract

Instructions

  • Preheat the oven to 350 degrees.
  • line your baking dish with parchment paper and baking spray.
  • Mix the cake mix, oil and eggs in a bowl
  • Fold in the chocolate chips
  • Use a rubber spatula to press into place and bake for 30-35 mins
  • Allow blondies to cool at least 15-20 mins before adding the glaze.
  • Mix all of the ingredients for the glaze. It should be thick so you can pour it on top of the blondies!

Notes

Notes:
I allowed the blondies to set up in the fridge for several hours for the photos. The glaze will be runny if its not intentionally made thick.
Baking Tip
To get the parchment to lay flat inside of the pan, lay the piece over the top of the baking dish. Cut a diagonal line in each corner about 1-2 inches long. Press the parchment down inside of the pan and the edges should fold together.
