Banana Cookie Bars with Salted Caramel Buttercream Frosting

Banana Cookie Bars are ooey gooey banana bars that are bursting with cinnamon flavor.

Equipment

  • 9x13 pan

Ingredients

  • 1 cup unsalted butter melted
  • 2 cups light brown sugar
  • 1 tbsp. vanilla extract
  • 2 large eggs room temperature
  • 2 cups all-purpose flour
  • 1 tsp. kosher salt
  • 2 ripe bananas mashed

Caramel Buttercream Frosting

  • ½ cup unsalted butter room temperature
  • 2 cups powdered sugar
  • ½ tsp. salt
  • ¼ cup caramel topping
  • tsp. whole milk

Instructions

  • Preheat the oven to 350°F
  • Coat a 9x13-inch baking dish with non-stick baking spray. Set to the side.
  • In a large bowl of a standing mixer, on medium speed, add the butter and brown sugar and mix until creamy.
  • Reduce the speed low speed, and add the vanilla and mix until combined. Begin to add the eggs one at a time, continue to mix on low until well combined.
  • In a medium sized bowl add your flour and salt.
  • Whisk to combine.
  • Add the flour mixture to the butter mixture, slowly, mix until well combined.
  • Remove the bowl from the stand mixer and fold in the bananas. Pour the batter into the baking pan, make sure to have the batter even throughout the whole baking pan.
  • Bake for 45 minutes, or until the center is set.

Salted Buttercream Frosting

  • In a large bowl of a stand, with a paddle attachment.
  • Add the butter, sugar, salt, and caramel topping.
  • Mix on low medium until well combined for 3 minutes. Add the milk and mix for another 2 minutes on low speed. Once the banana bars are cool, top with the buttercream.

Notes

 
Make sure that your ingredients are room temperature before you start baking them. 
Caramel topping can be found in the ice cream aisle or even on the coffee aisle at your local grocery store. 
To check your bars for doneness you can insert a toothpick in the center of your bars, and the they are done when the toothpick comes out clean. 
Garnish your bars with a cinnamon sugar mixture of extra flavor.
