Christmas Funfetti Cake is a soft Funfetti bundt cake topped with a sweet cream cheese frosting and dressed up with your favorite holiday sprinkles.

Equipment

  • 9 inch bundt pan

Ingredients

  • 1 C whole milk
  • 2 teaspoon pure vanilla extract
  • 1 C unsalted sweet cream butter softened
  • 2 C sugar
  • 3 C flour
  • 1 tablespoon baking powder
  • 5 large egg whites
  • 2 C Christmas Funfetti Sprinkles

Cream Cheese Frosting Ingredients

  • 4 oz cream cheese softened
  • ¼ C unsalted sweet cream butter softened
  • 1 teaspoon pure vanilla extract
  • 1 ½ -2 C powdered sugar
  • ¾ C Christmas Funfetti Sprinkles

Instructions

  • Preheat oven to 350 degrees and spray the bundt cake pan with pam baking spray
  • In a medium mixing bowl, whisk together the milk and vanilla and set aside
  • Using a standing mixer, beat together the butter and sugar until light and fluffy
  • In a large mixing bowl, whisk together the flour and baking powder
  • Alternating between the milk and dry ingredients, gradually pour into
  • the butter mixture. Mixing on low to medium speed until combined
  • Using another large mixing bowl and a hand mixer, beat the eggs until stiff peaks form
  • Fold the egg whites into the cake batter
  • Mix in the 2 C of sprinkles
  • Pour the cake batter into the bundt pan
  • Bake in the oven for 45-60 minutes or until a toothpick comes out clean in the center
  • Allow to cool for 15 minutes before turning out onto a wire rack

Cream Cheese Frosting

  • Using a standing mixer, beat together the cream cheese and butter until combined and smooth
  • Beat in the vanilla extract
  • Gradually beat in the powdered sugar until combined and smooth
  • Pour the frosting over the the bundt cake
  • Sprinkle the sprinkles on top

Notes

Use sprinkles are that known as "jimmies" for best results in your Christmas Funfetti Cake.
