Step 1: In a large bowl add the chicken breast and season with salt, pepper, Italian seasoning, garlic powder,vegetable oil and lemon juice. Stir until coated. In a large skillet add vegetable oil. Add the chicken once the oil is hot and sear on each side until both sides are cooked through.
Step 2: Once cooked and browned remove from the pan and set aside. Add the butter, red bell pepper, onion, garlic and Italian seasoning. stir
Step 3: Add the orzo and stir. Add the chicken broth and stir, bring to a boil and then reduce to a simmer. Cover and cook.
Step 4: Once done add the spinach, heavy cream and Parmesan and stir. Squeeze the juice of a lemon all over and stir once more. Slice the chicken and add on top of the orzo, top with parsley and lemon slices!

- 4 chicken breast boneless skinless
- 1 tsp salt
- 1 tsp pepper
- 2 tsp Italian seasoning divided
- 1 tsp garlic powder
- 2 tbsp vegetable oil divided
- 1 tbsp of lemon juice
- 1 tbsp unsalted butter
- 1 red bell pepper diced
- 1 yellow onion diced
- 1 tbsp minced garlic
- 1 cup orzo pasta
- 1 10 oz chicken broth
- ยพ cup heavy cream
- 1 ยฝ cups spinach
- ยฝ cup Parmesan cheese freshly shredded
- 1 lemon
Instructions
- In a large bowl add the chicken breast and season with salt, pepper, 1 tsp Italian seasoning, garlic powder, 1 tbsp vegetable oil and 1 tbsp of lemon juice. Stir around until everything is very well coated. In a large skillet add the remaining vegetable oil and set to a medium high heat. Add the chicken once the oil is hot and sear on each side for 6-7 minutes, or until both sides are browned and cooked through.
- Once cooked and browned remove from the pan and set aside. Add the butter, red bell pepper, onion, garlic and Italian seasoning. stir around for 1-2 minutes.
- Add the orzo and stir around for another 1-2 minutes. Add the chicken broth and stir, bring to a boil and then reduce to a low simmer. Cover and cook on low for 12-14 minutes.
- Once done add the spinach, heavy cream and Parmesan and stir. Squeeze the juice of a lemon all over and stir once more. Slice the chicken and add on top of the orzo, top with parsley and lemon slices! (Optional) Serve and enjoy!
