๐Ÿ”ช How to Make Coconut Clusters

Step 1: Preheat the oven and prepare your cookie sheets

Preheat the oven to 325 degrees, and then prepare two rimmed baking sheets with parchment paper.

Step 2: Place the cashews on the baking sheets

Spread the cashews on the prepared baking sheet.

Step 3: Roast the cashews until brown

Place in the oven for 20 minutes, stirring once, or until the cashews are golden brown.

Step 4: Cool and chop the cashews

Remove from the oven and cool completely. Coarsely chop the cashews.

Step 5: Toast the coconut

Next spread the coconut into an even layer on a baking sheet and bake for 10 minutes, stirring once.

Step 6: Cool the coconut

Remove from the oven and cool completely.

Step 7: Melt the chocolate chips

In a microwave safe bowl, pour the semi-sweet chocolate chips and heat for 1 minute. Stir vigorously using the residual heat to continue melting. Return to the microwave and heat in 30 second increments, stirring very well between each heating until melted. Do not overheat.

Step 8: Mix together the cashews, coconut and cereal

In a large bowl, mix the cashews, coconut, and cereal (if using.)

Step 9: Pour the chocolate over the cashew mixture

Pour the melted chocolate over the coconut mixture and mix until completely combined.

Step 10: Scoop the clusters and allow to harden

Using a medium scoop, portion the clusters and place on waxed paper in mounds.

Rest at room temperature until the chocolate has completely set.

Hint:ย If you want them to set faster, place them in the refrigerator for 20 minutes. The chocolate will not be as shiny, however.

  • Raisins – I like to add raisins to coconut clusters! You won’t believe the delicious taste this adds to it.
  • Dried cranberries – If you’re looking for something different to add to the cluster, add a few dried cranberries.
  • Walnuts – A little crunch goes a long way and that’s why walnuts are a fabulous variation option. Just make sure you buy the crushed walnuts!
  • Almonds – If you’re more of an almond person, then why not give them a try in these coconut clusters?
