Chocolate Chip Cookie Bars are thick, chewy and soft bars that are filled with chocolate chips, chocolate chunks and M&M’s. They are easy to make, and are a entire with the entire family.

WHAT YOU’LL NEED
Flour – All purpose or plain flour.
Oats – Old fashioned rolled oats
Seasonings and Spices – Baking Soda, Salt, Vanilla extract.
Butter – Unsalted butter.
Peanut Butter – Any brand. Creamy peanut butter.
Sugar – Granulated or pure cane sugar and light brown sugar.
Eggs – Eggs or Eggs yolks
Chocolate – Chocolate Chunk, Chocolate Chip and M&M’s. You can use semi sweet, milk chocolate or dark chocolate. I used semi-sweet.
STEP BY STEP INSTRUCTIONS
Step 1. Preheat the oven to 350 degrees. Line a 9×13-inch baking pan with parchment paper, leave a little overhang to lift bars out easily.
Step 2. In a small bowl, whisk together the flour, baking soda, salt and oats then set aside.
Step 3. In a mixing bowl with paddle attachment, cream together the butter, peanut butter, brown sugar and sugar until fluffy and light in color. About 2 minutes.
Step 4. Add in the vanilla, egg and egg yolk. Blend together and scrape down the sides of the bowl.
Step 5. Add the dry ingredients into the wet then mix till combined.
Step 6. Add the chocolate chip bars, chocolate chips and m&m’s, blend until mixed in.
Step 7. Press batter into the prepared pan. Top with a few of the chocolate chip bars, chocolate chips and m&m’s.
Step 8. Bake for 14-16 minutes or until the edges are lightly brown. Bars may look pale and slightly underdone in the middle and that’s okay!
Step 9. Let the bars cool in the baking pan for 20-30 minutes. Cut into squares and enjoy!!!
TIPS AND FAQS
You can use any color of M&M’s depending on the occasion. I used Christmas M&M’s for this batch since I usually make these for Christmas. If you want to add an extra special twist to them use caramel M&M’s. It makes them even more sweet!
Store your Chocolate Chip Cookie Bars on the counter for up to five days. These are great to make ahead and take along to potlucks or parties.
